Tuna Bean Salad

Ingredients

  • Servings: 6
  • 2 (6 ounce) cans albacore tuna, drained
  • 1 (16 ounce) can garbanzo beans or 1 (16 ounce) can beans, drained and rinsed
  • 2 tomatoes (preferably roma or heirloom)
  • 1/2 lemon
  • 1 shallot, thinly sliced
  • 1 garlic clove, minced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • pepper

Recipe

  • 1 in a medium bowl, add the tuna and beans but do not mix.
  • 2 coarsely chop the tomatoes, discarding the seeds.
  • 3 add the tomatoes, juice from the lemon half, shallot, garlic, olive oil, cumin, and pepper to the tuna and beans, mixing with a rubber spatula to keep the tuna in good-sized chunks.
  • 4 chill and enjoy!
