Tuna Bean Salad

Ingredients

- 2 (6 ounce) cans albacore tuna, drained
- 1 (16 ounce) can garbanzo beans or 1 (16 ounce) can beans, drained and rinsed
- 2 tomatoes (preferably roma or heirloom)
- 1/2 lemon
- 1 shallot, thinly sliced
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 teaspoon cumin
- pepper
Recipe
- 1 in a medium bowl, add the tuna and beans but do not mix.
- 2 coarsely chop the tomatoes, discarding the seeds.
- 3 add the tomatoes, juice from the lemon half, shallot, garlic, olive oil, cumin, and pepper to the tuna and beans, mixing with a rubber spatula to keep the tuna in good-sized chunks.
- 4 chill and enjoy!
