Toasted Almond Broccoli

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • Servings: 2
  • 4 tablespoons sliced almonds
  • 1/2 lb broccoli floret
  • 2 teaspoons olive oil
  • salt & freshly ground black pepper

Recipe

  • 1 heat a nonstick skillet on medium heat and add almonds.
  • 2 saute 1 minute or until almonds are golden, not brown.
  • 3 remove and set aside.
  • 4 place broccoli in a microwave-safe bowl and microwave on high for 4 minutes.
  • 5 remove and add oil and salt and pepper to taste.
  • 6 toss well.
  • 7 sprinkle almonds on top.
