Ingredients
- Servings: 10
- 3 bell peppers, 1 green, 1 yellow, 1 red
- 1 jalapeno (or more)
- 1 large onion
- 2 medium tomatoes
- fresh parsley, eyeball it
- 2 (14 ounce) cans black beans, drained
- 1 (12 ounce) bag frozen corn, thawed
- 1 (12 ounce) bag frozen corn, thawed
- 2 (16 ounce) bottles italian dressing
- 1 pinch salt
Recipe
- 1 chop all fresh veggies and place in a large bowl.
- 2 i give the jalapeno special attention to make sure that it is chopped fine.
- 3 add beans, corn, salt and dressing and mix until all is well coated.
- 4 cover and refrigerate.
- 5 the longer it sets the better it is!
- 6 serve chilled and enjoy. yummy!
