Lime Marmalade

Total Time: 24 hrs 50 mins Preparation Time: 24 hrs Cook Time: 50 mins

Ingredients

  • 6 small limes
  • 3 lemons
  • 4 lbs sugar
  • 1 small pineapple

Recipe

  • 1 scrub limes and lemons, then cut in halves and remove seeds.
  • 2 cut into thin slices.
  • 3 measure fruits and juices and add equal amount of water.
  • 4 soak for 12 hours.
  • 5 simmer for 20 mins.
  • 6 then let stand 12 hours.
  • 7 add 3/4 cup sugar for every cup of fruit/juice.
  • 8 cook the mixture until jellying stage is reached.
  • 9 pour into sterilized jars, leaving 1/4" margin at top and seal with lids.
  • 10 cool on metal rack and store in a dry, cool place.
