Pineapple Rum Granita

Ingredients
- Servings: 8
- 1 cup water
- 3/4 cup pineapple juice
- 1/3 cup sugar
- 2 tablespoons dark rum
Recipe
- 1 combine the first 3 ingredients in a medium saucepan; bring to a boil. cook 1 minute or until sugar dissolves, stirring frequently.
- 2 remove from heat; stir in rum. cool completely. pour into an 8-inch square baking dish. cover and freeze 8 hours or until firm.
- 3 remove mixture from freezer; scrape entire mixture with a fork until fluffy.
