- 6 -8 spring onions, trimmed and finely chopped
- 2 tablespoons olive oil
- 350 g zucchini, sliced
- 1 tablespoon pine nuts, toasted
- 1 orange, juice and finely grated rind of
- 2 tablespoons fresh dill
- salt
- pepper
Recipe
- 1 fry onions in oil for 1 minute then add zucchini and stir-fry for 2 minutes add all the remaining ingredients, and toss over a high heat until most of the juice is evaporated.
