Tuna Curry Over Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups rice
  • 1 dash salt
  • 1 teaspoon turmeric powder
  • 1 tablespoon corn oil
  • 1 small onion, diced
  • 1 medium tomato, diced
  • 2 (5 ounce) cans tuna in water, drained
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 2 tablespoons curry powder
  • 1 dash ground pepper
  • 1 teaspoon dried parsley
  • 1 fluid ounce milk
  • 1 cup water

Recipe

  • 1 boil the rice as usual adding salt and turmeric powder to the water.
  • 2 fry the diced onion and tomato in cooking oil.
  • 3 mix in spices and flour.
  • 4 add water, milk and tuna.
  • 5 let this simmer for about 15 minutes.
  • 6 add more flour or water depending on how thick you like the sauce.
  • 7 serve on top of the rice.
