Zucchini Linguine

Total Time: 11 mins Preparation Time: 8 mins Cook Time: 3 mins

Ingredients

  • 2 8 inch long zucchini, ends trimmed
  • 2 tablespoons olive oil
  • 1/2 lemon, juice of
  • salt and pepper

Recipe

  • 1 julienne just the outsides of each zucchini lengthwise using a mandoline or by hand.
  • 2 discard seed core.
  • 3 heat oil in a large nonstick skillet over medium-high heat.
  • 4 add zucchini and sauté 3 minutes, or until soft.
  • 5 season with lemon juice, salt and pepper.
