Rhubarb Whip Dessert

Ingredients
- Servings: 6
- 4 cups diced rhubarb
- 1/2 cup granulated sugar
- 1 1/2 cups water
- 1 (6 ounce) package strawberry gelatin
- 1/2 cup whipped cream
Recipe
- 1 mix rhubarb, sugar and ½ cup water in saucepan.
- 2 stir occasionally and bring to a boil.
- 3 cover saucepan and cook for 8 10 minutes.
- 4 continue cooking, and add strawberry gelatin,continuously stirring until gelatin dissolves.
- 5 remove from heat and add 1-cup cold water.
- 6 allow to cool, then place in refrigerator to chill until partially set.
- 7 remove from refrigerator and whip mixture with electric beater until fluffy.
- 8 fold in whipped cream.
- 9 garnish with fresh strawberries (whole or sliced).
