Rhubarb Whip Dessert

Total Time: 4 hrs 10 mins Preparation Time: 4 hrs Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 4 cups diced rhubarb
  • 1/2 cup granulated sugar
  • 1 1/2 cups water
  • 1 (6 ounce) package strawberry gelatin
  • 1/2 cup whipped cream

Recipe

  • 1 mix rhubarb, sugar and ½ cup water in saucepan.
  • 2 stir occasionally and bring to a boil.
  • 3 cover saucepan and cook for 8 ­ 10 minutes.
  • 4 continue cooking, and add strawberry gelatin,continuously stirring until gelatin dissolves.
  • 5 remove from heat and add 1-cup cold water.
  • 6 allow to cool, then place in refrigerator to chill until partially set.
  • 7 remove from refrigerator and whip mixture with electric beater until fluffy.
  • 8 fold in whipped cream.
  • 9 garnish with fresh strawberries (whole or sliced).
