Cucumber Raita

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 1/2 cucumber (diced)
  • 1/2 teaspoon salt
  • 1 pint natural yoghurt
  • 2 spring onions (trimmed & sliced)
  • 1 teaspoon ground cumin
  • 1 teaspoon caster sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh mint (chopped)

Recipe

  • 1 place the diced cucumber in a bowl and sprinkle with salt. stir in the other ingredients and chill until ready to serve.
