- 1 cut turnip leaves from turnip root. wash turnip greens 3 times in cold water and cut off bit stem sections. peel turnip root and cut into small cubes.
- 2 place water in a large pot with lid and bring to a boil. place turnip greens along with cubed roots into pot. add salt and bacon drippings.
- 3 boil on simmering heat for approximately one hour. cut turnips greens into small pieces.

- 1 preheat the oven to 315f degrees.
- 2 cut the tomatoes into quarters, lengthwise. lay them skin side down on a wire rack in a baking pan.
- 3 sprinkle with salt (if using), pepper, and thyme.
- 4 cook in the oven for 2 1/2 hours, checking occasionaly to make sure the tomatoes don't burn.
- 5 toss the tomatoes in the olive oil and leave to cool before packing into sterilized jars and sealing.

- 7 note: to sterilize a storage jar, rinse it with boiling water and then place it in a warm oven until it's completely dry (don't dry it with a towel).

- 1 1/2 cups zinfandel
- 3/4 cup ketchup

- 1 teaspoon liquid smoke

- 1 melt the butter in a heavy saucepan over medium heat.
- 2 add the shallots and garlic, cook until just beginning to brown, 3 or 4 minutes.
- 3 add all but 2 tablespoons of the wine and bring to a boil.
- 4 let the mixture boil until reduced to about 1/2 cup.
- 5 reduce the heat and stir in the ketchup, brown sugar, honey and liquid smoke.
- 6 add salt and pepper to taste.
- 7 let the sauce simmer gently until thick, 6 to 10 minutes, adding the remaining 2 tablespoons wine after 4 minutes.
