Sunflower Brittle

Ingredients
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1 1/2 cups sunflower seeds
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Recipe
- 1 butter the sides of a heavy saucepan.
- 2 add sugar, corn syrup and water and bring to a boil, stirring constantly.
- 3 cook and stir over medium low heat until candy thermometer reads 260 degrees.
- 4 stir in sunflower seeds and butter quickly.
- 5 cook until 300 degrees.
- 6 remove from heat and stir in vanilla and baking soda.
- 7 pour into a buttered baking pan and spread evenly.
- 8 cool completly and break into pieces.
