Sunflower Brittle

Total Time: 1 hr 20 mins Preparation Time: 1 hr Cook Time: 20 mins

Ingredients

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 1/2 cups sunflower seeds
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Recipe

  • 1 butter the sides of a heavy saucepan.
  • 2 add sugar, corn syrup and water and bring to a boil, stirring constantly.
  • 3 cook and stir over medium low heat until candy thermometer reads 260 degrees.
  • 4 stir in sunflower seeds and butter quickly.
  • 5 cook until 300 degrees.
  • 6 remove from heat and stir in vanilla and baking soda.
  • 7 pour into a buttered baking pan and spread evenly.
  • 8 cool completly and break into pieces.
