Ingredients

- 6 medium tomatoes, chopped
- 2 (15 ounce) cans chickpeas, drained and rinsed
- 6 ounces marinated artichokes, undrained, artichokes quartered
- 4 ounces green olives, pitted
- 3 tablespoons cilantro, chopped
- 1/2 lemon, juice of
- 4 tablespoons olive oil (extra virgin is best)
- 1/2 teaspoon ground black pepper (or to taste)
Recipe
- 1 put everything, including the liquid from the artichoke jar, together.
