Tomato And Chickpea Salad

Ingredients

  • Servings: 6
  • 6 medium tomatoes, chopped
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 6 ounces marinated artichokes, undrained, artichokes quartered
  • 4 ounces green olives, pitted
  • 3 tablespoons cilantro, chopped
  • 1/2 lemon, juice of
  • 4 tablespoons olive oil (extra virgin is best)
  • 1/2 teaspoon ground black pepper (or to taste)

Recipe

  • 1 put everything, including the liquid from the artichoke jar, together.
