Turkey Quinoa Waldorf Salad

Ingredients

  • Servings: 6
  • 1 cup cooked quinoa
  • 1 apple, peeled and chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, shredded
  • 1/4 cup chopped walnuts
  • 1/3 cup raisins
  • 1 (5 ounce) can turkey, shredded
  • 2 tablespoons mayonnaise
  • 6 large lettuce leaves

Recipe

  • 1 mix all ingredients together except lettuce.
  • 2 chill and serve on lettuce leaves. season with salt and pepper as desired.
