Zippy Prune Whip

Ingredients

• 2 large egg whites
• 1/3 cup sugar
• 2 tablespoons frozen lemonade concentrate
• 1 1/2 cups strained prunes
• heavy cream, whipped

Recipe

• 1 mix together egg whites, sugar and lemonade concentrate in top of double boiler.cook over boiling water, beating constantly with electric mixer until mixture fluffs up and holds it shape.about 4-5 minutes.
• 2 remove from heat source, fold in prunes.col.spoon into sherbert glasses --
• 3 top with whipped cream.
