Zesty Vegan Spaghetti Squash

Ingredients

  • 32 ounces spaghetti squash
  • 1 1/2 cups chopped sun-dried tomatoes packed in oil
  • 1 medium onion, chopped
  • 1 cup celery, chopped
  • 2 garlic cloves, minced
  • 8 ounces sliced mushrooms
  • 3 (14 1/2 ounce) cans chopped tomatoes
  • 2/3 cup dry wine
  • 1 teaspoon dried fennel seed
  • 1 1/2 teaspoons basil
  • 1/2 teaspoon oregano
  • salt and black pepper, to taste

Recipe

  • 1 combine all the ingredients in a slow cooker. cover and cook on low for 6 to 8 hours.
