Sweet Potato Cream Cheese Pudding

Ingredients

  • Servings: 6
  • 8 ounces low-fat cream cheese
  • 1/4 cup sugar
  • 16 ounces cooked sweet potatoes
  • 1 (3 1/2 ounce) box vanilla instant pudding mix
  • 2 teaspoons pumpkin pie spice
  • 1 1/4 cups fat-free condensed milk (not sweetened condensed)
  • 1 teaspoon vanilla

Recipe

  • 1 mash sweet potatoes, the result will be lumpy unless you use a blender or food processor.
  • 2 soften the cream cheese and mix with sugar.
  • 3 mix all other ingredients except milk in bowl until mostly smooth.
  • 4 add milk until pudding reaches desired consistency.
  • 5 chill before serving. cook time is for the sweet potatoes.
