- 4 medium sweet potatoes
- 1 tablespoon margarine
- 1/4 cup orange rind
- 1/4 teaspoon nutmeg
Recipe
- 1 cook whole sweet potatoes in boiling water for 25 to 30 minutes, or until tender.
- 2 peel and mash.
- 3 add remaining ingredients and mix thoroughly.
- 4 place in a lightly oiled 1 quart casserole dish.
- 5 bake uncovered in 375 degree oven for 25 minutes.
