Strawberries In Zinfandel

Ingredients
- Servings: 4
- 2 oranges
- 6 cups water
- 1/2 cup zinfandel wine
- 1/4 cup sugar
- 1 pint fresh strawberries, hulled and cut into six wedges
- 1 pint vanilla ice cream
Recipe
- 1 remove zest from 1 orange and cut into thin strips.
- 2 bring 2 cups water to boil in small saucepan.
- 3 add peel and return to boil.
- 4 drain.
- 5 repeat process two more times.
- 6 refrigerate.
- 7 squeeze enough juice from oranges to equal 1/2 cup.
- 8 bring juice, zinfandel and sugar to a simmer in a small saucepan.
- 9 cook 2 to 3 minutes or until the sugar dissolves.
- 10 transfer to sauce to a bowl and stir in berries.
- 11 chill for 1 1/2 hours.
- 12 divide the ice cream between 4 bowls.
- 13 top with strawberries& sauce.
- 14 garnish with the cooked peel.
