Strawberries In Zinfandel

Total Time: 1 hr 40 mins Preparation Time: 5 mins Cook Time: 1 hr 35 mins

Ingredients

  • Servings: 4
  • 2 oranges
  • 6 cups water
  • 1/2 cup zinfandel wine
  • 1/4 cup sugar
  • 1 pint fresh strawberries, hulled and cut into six wedges
  • 1 pint vanilla ice cream

Recipe

  • 1 remove zest from 1 orange and cut into thin strips.
  • 2 bring 2 cups water to boil in small saucepan.
  • 3 add peel and return to boil.
  • 4 drain.
  • 5 repeat process two more times.
  • 6 refrigerate.
  • 7 squeeze enough juice from oranges to equal 1/2 cup.
  • 8 bring juice, zinfandel and sugar to a simmer in a small saucepan.
  • 9 cook 2 to 3 minutes or until the sugar dissolves.
  • 10 transfer to sauce to a bowl and stir in berries.
  • 11 chill for 1 1/2 hours.
  • 12 divide the ice cream between 4 bowls.
  • 13 top with strawberries& sauce.
  • 14 garnish with the cooked peel.
