Pear Apricot Jam

Ingredients
- 3 lbs pears
- 2 lemons
- 2 1/2 cups water
- 2 1/2 cups dried apricots
- 4 cups sugar
Recipe
- 1 peel, core and chop pears.
- 2 juice and zest lemons.
- 3 place pears in pan; cover with water, juice and zest.
- 4 chop apricots; add to the water.
- 5 bring pan to a boil.
- 6 simmer until pears are just soft, about 10 minutes.
- 7 add the sugar and stir over low heat until sugar dissolves.
- 8 increase the heat and boil rapidly for about 20-30 minutes or until setting point is reached.
- 9 skim off any scum on top; pour into clean jars and seal.
