Pear Apricot Jam

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 3 lbs pears
  • 2 lemons
  • 2 1/2 cups water
  • 2 1/2 cups dried apricots
  • 4 cups sugar

Recipe

  • 1 peel, core and chop pears.
  • 2 juice and zest lemons.
  • 3 place pears in pan; cover with water, juice and zest.
  • 4 chop apricots; add to the water.
  • 5 bring pan to a boil.
  • 6 simmer until pears are just soft, about 10 minutes.
  • 7 add the sugar and stir over low heat until sugar dissolves.
  • 8 increase the heat and boil rapidly for about 20-30 minutes or until setting point is reached.
  • 9 skim off any scum on top; pour into clean jars and seal.
