- 1 note: it is very important to press and dry the tofu well, otherwise, this will be a big sloppy mess instead of crumbles.
- 2 combine all ingredients except tofu in a pan and simmer gently for 5-10 minutes, just until the sauce becomes slightly thick.
- 3 set aside the sauce to cool a bit.
- 4 while the sauce is cooling, crumble the pressed and dried tofu into a bowl.
- 5 toss the tofu with a bit of the cooled sauce, adding sauce in small increments until the tofu is uniformly colored, but with no liquid at the bottom of the bowl.

- 2 2). in another large pot mix 2 cups of vinegar to 1 gallon of spring water to a rolling boil. this is a step you estimate how much liquid you will need and you can always make another pot to finish up what amount of corn you have.
- 3 3). sterilize pint jars and lids per ball jar directions.
- 4 4.) cool the corn until you can handle it, cut it off the cob and fill jars to 1 inch from the top.
- 5 5). put 1/2 tsp of canning salt in the jar on top of the corn.

- 1 remove the husks from the tomatillos and wash all the stickiness from the outside. cut into quarters to make blending easier.
- 2 wash cilantro and green onions well, and rough chop cilantro and cut onions into thirds.
- 3 prep green chilies by cutting them in half. remove seeds and interior veins if you want the chilies to be less hot.
- 4 blend all in the blender, the idea is to get a nice grind, not a paste, so pulse works well. i'm sure you could use a food processor, but this salsa usually turns out quite liquidy because of the tomatillos. i know my food processor would make a mess.
- 5 if you do find that the salsa is not blending well because of lack of liquid, you can add lime juice or water 1 tablespoon at a time. tomatillos are tangy by themselves, so keep that in mind when using lime juice. usually the tomatillos have enough liquid in them to facilitate blending, and putting them first in the blender will help.

- 600 g soybeans
- 4 1/4 liters water
- 1 cup lemon juice, or 20 g calcium sulfate
- cheesecloth, and containers, molder

- 1 cleanse the soybeans and soak in water 8hrs or overnight.
- 2 process the soaked soybeans in a blender in several portions with 4.2 liters water.
- 3 filter milk from the soy with cheesecloth.
- 4 cook soymilk for 10mins over medium heat until the fragrance of the soymilk is noticeable, keep stirring while cooking.
- 5 turn to low heat and continue cooking until boiling.
- 6 measure the temp of soymilk. the ideal temp is 84 deg celsius if calcium sulfate or 40 degree celsius if lemon is used as coagulator.
- 7 use 20 g calcium sulfate mixed with 1 cup water or use 1 cup lemon juice (without water), as coagulator.
- 8 mix water and calcium sulfate evenly.
- 9 pour the coagulator into a container and shake well.
- 10 hold the soymilk 60cm (24") above the coagulator and quickly pour into the container.
- 11 do not move or shake the container and let the mixture set for 5 mins until the soya pudding is set.
- 12 cover the mold with a big piece of cheesecloth. the mold has to have the ability to drain water.
- 13 gently break the soya pudding into pieces and put into the cheescloth in the mold.
- 14 cover with the cheesecloth.
- 15 close up the mold and put the heavy object on top of the mold.
- 16 leave the weight on for 25 mins for soft tofu, 30 mins for medium soft tofu, or 35 mins for hard tofu.
- 17 when the tofu is ready, invert and remove the mold, slowly peeling away the cheesecloth until the tofu is shown.

- 1 (9 1/2 ounce) package udon noodles
- 1 (16 ounce) package tofu, drained and cubed
- 3 green onions, chopped
- 1/2 cup shredded carrot
- 1 cup broccoli floret
- 3 tablespoons olive oil
- 3 tablespoons tamari soy sauce (or soy sauce)
- 1 pinch salt
- 1 pinch black pepper

- 1 bring 4 cups of lightly-salted water to a boil, and let the udon noodles simmer for about 5-6 minutes, and drain.
- 2 put the udon noodles in a bowl and set aside.
- 3 put the olive oil and tamari/soy sauce with a pinch of salt and pepper in the same pot to coat the vegetables and tofu, and let cook on medium heat while loosely covered to desired tenderness, about 10-12 minutes.
- 4 uncover and add the cooked udon noodles, adding extra olive oil and tamari/soy sauce if needed. stir until fully coated, then serve or freeze.
