Kohl Slaw

Ingredients

  • Servings: 4
  • 2 tablespoons cherry vinegar
  • 1 tablespoon vegan mayonnaise (such as follow your heart® veganaise®)
  • 1 tablespoon agave nectar
  • 1 tablespoon brown mustard seeds
  • 1 teaspoon dijon mustard (optional)
  • salt and ground black pepper to taste
  • 2 crisp apples, shredded
  • 2 kohlrabi bulbs, peeled and shredded
  • 4 carrots, shredded

Recipe

    Preparation Time: 15 mins Ready Time: 1 hr 15 mins

  • whisk vinegar, vegan mayonnaise, agave nectar, mustard seeds, dijon mustard, salt, and pepper together in a bowl until dressing is smooth. stir apples, kohlrabi, and carrots into dressing until evenly coated. cover bowl with plastic wrap and refrigerate for flavors to blend, at least 1 hour.
