Sweet And Sour Pearls (onions)

Ingredients

  • Servings: 8
  • 8 cups pearl onions (4 10 oz packages)
  • 1 teaspoon orange rind, grated
  • 1 bay leaf
  • 1 cup water
  • 1 cup raisins
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon tomato paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 garlic clove, slivered
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Recipe

  • 1 cover onions with boiling water in a heatproof bowl and let stand for 30 seconds.
  • 2 drain and peel.
  • 3 combine onions, orange rind, bay leaf, 1 cup water, raisins, oil, vinegar, tomato paste, salt, pepper and garlic in slow cooker (slow cooker should be 1/2 to 3/4 full).
  • 4 cover and cook on low for 6 hours or until onions are tender.
  • 5 discard bay leaf.
  • 6 mix cornstarch with 2 tbsp water and stir into slow cooker.
  • 7 cover and cook on high for 10 minutes or until thickened.
