Spinach And Black-eyed Peas

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 large onion, chopped small
  • 2 tablespoons olive oil
  • 2 (10 ounce) packages frozen chopped spinach
  • 1 (15 ounce) can black-eyed peas, drained and rinsed
  • 1 medium lemon, juice of (or 2-3 tbsp lemon juice)
  • 2 teaspoons allspice (to taste)
  • 1 teaspoon salt (to taste)

Recipe

  • 1 chop onions and saute in olive oil over medium heat until soft.
  • 2 add drained, rinsed black-eyed peas, lemon, salt and allspice and mix well.
  • 3 place two "bricks" of spinach on top and continue to cook on medium heat until spinach is cooked through, stirring occassionally.
