Sweet Potato Biscuits

Ingredients

  • Servings: 18
  • 3/4 cup mashed sweet potatoes
  • 3 -4 tablespoons margarine, melted
  • 2/3 cup milk
  • 1 3/4-2 cups flour, divided
  • 4 teaspoons baking powder
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • milk for glaze
  • nutmeg (to garnish)

Recipe

  • 1 mix sweet potatoes and margarine in a medium bowl; stir in 2/3 cup milk.
  • 2 mix in 1 3/4 cup flour, baking powder, brown sugar, and salt. mix in remaining 1/4 cup flour if dough is too sticky to handle easily.
  • 3 knead dough on floured surface 5 to 6 times. roll on floured surface to 1/2 inch thickness; cut into 18 biscuits with a 2-inch cutter.
  • 4 place close together on baking sheet. brush lightly with milk and sprinkle with nutmeg.
  • 5 bake at 425 for 12-15 minutes.
