Sweet Potato Biscuits

Ingredients

- 3/4 cup mashed sweet potatoes
- 3 -4 tablespoons margarine, melted
- 2/3 cup milk
- 1 3/4-2 cups flour, divided
- 4 teaspoons baking powder
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- milk for glaze
- nutmeg (to garnish)
Recipe
- 1 mix sweet potatoes and margarine in a medium bowl; stir in 2/3 cup milk.
- 2 mix in 1 3/4 cup flour, baking powder, brown sugar, and salt. mix in remaining 1/4 cup flour if dough is too sticky to handle easily.
- 3 knead dough on floured surface 5 to 6 times. roll on floured surface to 1/2 inch thickness; cut into 18 biscuits with a 2-inch cutter.
- 4 place close together on baking sheet. brush lightly with milk and sprinkle with nutmeg.
- 5 bake at 425 for 12-15 minutes.
