Sweet And Tangy Butter Beans

Ingredients

- 2 tablespoons vegetable oil
- 1 cup chopped onion
- 1 cup chopped sweet red pepper
- 1 garlic clove, finely chopped
- 1 (8 ounce) can tomato sauce
- 1/3 cup apple juice
- 1 tablespoon brown sugar
- 1 tablespoon vinegar
- 1 teaspoon prepared yellow mustard
- 2 (1 lb) cans butter beans, rinsed and drained
- 1 1/2 teaspoons cornstarch
- 2 tablespoons water
Recipe
- 1 preheat oven to 350 degrees.
- 2 spray a 1-1/2 qt baking dish with a nonstick cooking spray.
- 3 heat oil in a large nonstick skillet over medium heat.
- 4 add onions, red pepper, and garlic.
- 5 cook until onions are tender and start to brown, about 10 minutes.
- 6 remove from heat.
- 7 add remaining ingredients, dissolving cornstarch in the 2 tbsp of water before adding.
- 8 mix well.
- 9 transfer to prepared baking dish.
- 10 bake, uncovered, for 1 hour.
