Sweet And Tangy Butter Beans

Ingredients

  • Servings: 6
  • 2 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped sweet red pepper
  • 1 garlic clove, finely chopped
  • 1 (8 ounce) can tomato sauce
  • 1/3 cup apple juice
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • 1 teaspoon prepared yellow mustard
  • 2 (1 lb) cans butter beans, rinsed and drained
  • 1 1/2 teaspoons cornstarch
  • 2 tablespoons water

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 spray a 1-1/2 qt baking dish with a nonstick cooking spray.
  • 3 heat oil in a large nonstick skillet over medium heat.
  • 4 add onions, red pepper, and garlic.
  • 5 cook until onions are tender and start to brown, about 10 minutes.
  • 6 remove from heat.
  • 7 add remaining ingredients, dissolving cornstarch in the 2 tbsp of water before adding.
  • 8 mix well.
  • 9 transfer to prepared baking dish.
  • 10 bake, uncovered, for 1 hour.
