Pickled Red Onions

Ingredients

  • Servings: 4
  • 1 red onion, halved and thinly sliced
  • 1 1/2 cups hot water
  • 1 cup distilled vinegar
  • 3 tablespoons sugar
  • 2 serrano chilies, halved lengthwise
  • 1/8 teaspoon red pepper, dried, crushed
  • 1/2 teaspoon salt

Recipe

  • 1 combine hot water, vinegar, sugar and salt in a glass bowl. stir until sugar and salt dissolve.
  • 2 add onions, serrano and red peppers. stir to blend.
  • 3 cover and chill overnight.
  • 4 will keep for up to a week.
  • 5 use slotted spoon to transfer to plate and serve.
