Pickled Red Onions

Ingredients

- 1 red onion, halved and thinly sliced
- 1 1/2 cups hot water
- 1 cup distilled vinegar
- 3 tablespoons sugar
- 2 serrano chilies, halved lengthwise
- 1/8 teaspoon red pepper, dried, crushed
- 1/2 teaspoon salt
Recipe
- 1 combine hot water, vinegar, sugar and salt in a glass bowl. stir until sugar and salt dissolve.
- 2 add onions, serrano and red peppers. stir to blend.
- 3 cover and chill overnight.
- 4 will keep for up to a week.
- 5 use slotted spoon to transfer to plate and serve.
