Ingredients

- 1 cup cider vinegar
- 1/2 cup sugar
- 1 teaspoon toasted cumin seed
- 1 teaspoon salt
- 3 red onions, cut in chunks
- 3 tablespoons chopped cilantro
Recipe
- 1 bring vinegar, cumin, salt and sugar to a boil in a saucepan, then reduce heat and simmer 5 minutes add onions,simmer for 2 minutes more.
- 2 transfer to a bowl, stir in cilantro.
- 3 this tastes better after it sits for a few days or more, covered and refrigerated.
