Homemade Ginger Beer

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 16
  • 2 lbs ginger, cut into 1 inch pieces
  • 1 gallon boiling water
  • 1 1/2 cups freshly squeezed lime juice (about 8 limes)
  • 1 1/2 cups superfine sugar

Recipe

  • 1 place ginger in a food processor, and process until finely chopped.
  • 2 transfer to a large pot, and add boiling water.
  • 3 allow to stand for 1 hour.
  • 4 drain with a fine sieve lined with a double thickness of damp cheesecloth.
  • 5 discard solids.
  • 6 add lime juice and sugar, and stir to dissolve.
