Homemade Ginger Beer

Ingredients

- 2 lbs ginger, cut into 1 inch pieces
- 1 gallon boiling water
- 1 1/2 cups freshly squeezed lime juice (about 8 limes)
- 1 1/2 cups superfine sugar
Recipe
- 1 place ginger in a food processor, and process until finely chopped.
- 2 transfer to a large pot, and add boiling water.
- 3 allow to stand for 1 hour.
- 4 drain with a fine sieve lined with a double thickness of damp cheesecloth.
- 5 discard solids.
- 6 add lime juice and sugar, and stir to dissolve.
