Tropical Sundae Topping

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 medium fresh cantaloupe, rind and seeds removed
  • 2 tablespoons cornstarch
  • 1/2 cup granulated sugar
  • 1/2 cup orange juice
  • 1/2 teaspoon finely grated fresh lemon rind

Recipe

  • 1 purée cantaloupe chunks in blender or food processor.
  • 2 strain through sieve.
  • 3 discard pulp.
  • 4 heat 1/4 cup strained cantaloupe juice with cornstarch.
  • 5 stirring constantly, bring to a boil to clear cornstarch.
  • 6 remove from heat, stir in 1 1/3 cups cantaloupe juice.
  • 7 in another saucepan, combine orange juice and sugar.
  • 8 heat and stir until sugar is completely dissolved.
  • 9 combine cantaloupe and orange mixtures, stir in lemon rind.
  • 10 serve hot or cold, poured over ice cream and melon chunks.
