Sweet 'n Spicy Black Beans

Ingredients

  • Servings: 2
  • 1 (14 ounce) can black soybeans, drained
  • 1/4-1/2 cup of your favorite spicy salsa, to taste
  • 1 teaspoon chopped pickled jalapeno pepper (optional)
  • cayenne, to taste
  • 1 clove garlic, crushed
  • 1 tablespoon lime juice
  • 1 teaspoon soy sauce
  • 1 tablespoon chopped fresh basil or 1 tablespoon cilantro, your preference
  • 1/4 cup dry sherry
  • 3 packets splenda sugar substitute
  • cornstarch or arrowroot (small amount of heat-activated thickener) (optional)

Recipe

  • 1 in a saucepan over medium to high heat, combine all ingredients but the thickener (i use about 1/2 teaspoon arrowroot powder).
  • 2 when ingredients have simmered for about 5 minutes, sprinkle in the thickener and stir well; remove saucepan from heat and let the sauce thicken.
  • 3 serve and enjoy!
  • 4 makes 2-4 servings.
