Spaghetti Squash Saute

Ingredients

- 1 -2 lb spaghetti squash (approximately)
- 2 tablespoons vegetable oil
- 1/2 cup chopped green onion
- 2 garlic cloves, minced
- 1/2 cup chopped fresh parsley
- 1 tablespoon lemon juice
- 1/4 cup grated parmesan cheese
Recipe
- 1 place whole spaghetti squash in baking dish.
- 2 prick all over with fork.
- 3 bake at 350 degrees for 45 to 60 minutes or until tender; cool.
- 4 cut squash in half lengthwise; remove seeds.
- 5 with fork, scoop out flesh into medium bowl, separating into spaghetti-like strands.
- 6 in large skillet, heat oil over medium-high heat.
- 7 cook green onions and garlic in oil about 3 minutes, stirring constantly.
- 8 add squash and stir-fry 3 to 5 minutes more until heated through.
- 9 stir in parsley and lemon juice; mix well.
- 10 add cheese and toss to coat.
