Cucumber Vinegar

Ingredients
- 3 medium cucumbers
- 1 tablespoon peppercorn
- 1 quart vinegar
Recipe
- 1 wash, slice but do not peel the cucumbers.
- 2 place in a clean crock, stainless or enamel pot.
- 3 add the peppercorns and sliced cukes in layers.
- 4 bring the vinegar to a boil.
- 5 pour over the cukes.
- 6 cover and steep for 3 weeks in a cool place.
- 7 strain through clean cheesecloth into another sterile container.
- 8 let stand 6 hours to settle.
- 9 ladle off the clear vinegar into sterile containers.
- 10 seal.
