Sima

Total Time: 60 hrs 30 mins Preparation Time: 12 hrs 30 mins Cook Time: 48 hrs

Ingredients

  • 2 large lemons
  • 1/2 cup granulated sugar
  • 5 teaspoons sugar
  • 1/2 cup brown sugar
  • 5 quarts boiling water
  • 1/8 teaspoon active dry yeast
  • 15 raisins

Recipe

  • 1 peel lemons with (just zest) with veg. peeler.
  • 2 eemove pith ( part).
  • 3 alice lemons very thin.
  • 4 in 6-8 qt bowl place lemon peel lemon slices and sugar (minus 5 tsps).
  • 5 pour water over and stir let cool to tepid.
  • 6 stir in yeast.
  • 7 let stand 12 hrs uncovered.
  • 8 add 3 raisins and 1 tsp sugar to each bottle.
  • 9 strain into bottle (5 qts bottles) with lids or corks and seal.
  • 10 let stand at room temp for 1-2 days until raisins float.
  • 11 chill till ready to serve.
