Pickled Onions

Ingredients
- 1 large red onion, halved and thinly sliced
- 1 teaspoon dried oregano
- 1 bay leaf
- 1/2 teaspoon salt
- 1/2 cup cider vinegar
Recipe
- 1 place onion in a medium saucepan with enough cold water to cover. bring to a boil over medium heat.
- 2 when water begins to boil, cook 1 minute. remove from heat and drain.
- 3 place onion in a medium bowl. add remaining ingredients and just enough water to barely cover. let stand at room temperature 3-4 hours.
- 4 to use, drain well. serve as garnish or condiment.
