Pickled Green Tomatoes

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 3/4 cup vinegar
  • 2/3 cup water
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 tablespoon dill seed
  • 3 -6 small serrano peppers

Recipe

  • 1 mix vinegar, water, sugar and (1/4 tsp.) salt in a small pan.
  • 2 bring to boiling, reduce and simmer uncovered for 5 minutes.
  • 3 cut tomatoes into wedges.
  • 4 cook tomatoes and (1 tsp) salt covered in boiling water for 1 minute.
  • 5 drain tomatoes, rinse with cold water.
  • 6 transfer to 3 hot, clean dry 1/2 pint jars.
  • 7 place 1 teaspoons of the dill seed and 1-2 serrano peppers into each jar.
  • 8 pour pickling mixture over tomatoes. be sure to leave 1/4" head space.
  • 9 seal and refrigerate overnight.
