tisa's big top watermelon salad

Ingredients

  • Servings: 8
  • 7 cups cubed seeded watermelon
  • 1 cup crumbled feta cheese
  • 1/2 red onion, thinly sliced
  • 1/2 cup arugula
  • 1/3 cup pine nuts, toasted
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

    Preparation Time: 20 mins Ready Time: 20 mins

  • combine watermelon, feta cheese, red onion, arugula, pine nuts, parsley, and mint in a large mixing bowl.
  • whisk olive oil, lemon juice, salt, and pepper together in a small bowl; drizzle over salad and toss to coat.
