Grog (hot Toddy)

Ingredients

  • Servings: 1
  • 2 cups water
  • 2 tablespoons sugar
  • 1 cup rum or 1 cup red wine
  • 3 cloves (optional, if using wine) (optional)

Recipe

  • 1 boil water and sugar until dissolved.
  • 2 add rum or wine. if using wine, stir in a few cloves.
  • 3 drink hot for colds, fever, flu, etc.

Spanish Green Beans

Ingredients

  • Servings: 4
  • 1/2 lb green beans
  • 1/4 cup onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 cup tomato, chopped
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary

Recipe

  • 1 cook beans until tender. drain and set aside. saute onion and pepper in oil until soft. add tomatoes and spices. stir in beans. heat through.

Spinach And Mackerel Salad

Ingredients

  • Servings: 4
  • 4 tablespoons oil
  • 2 tablespoons vinegar
  • 1 avocado
  • 180 g spinach
  • 8 tomatoes
  • 1/4 cucumber
  • 285 g mackerel

Recipe

  • 1 to make the dressing, whisk the oils with the vinegar in a bowl and season. skin and stone the avocado and cut into thin slices or cubes. toss gently in the dressing.
  • 2 wash the spinach in a large bowl of cold water. drain and dry in a salad spinner, or drain in a colander and pat dry with the kitchen paper.
  • 3 toss the spinach with the tomatoes, cucumber, mackerel, avocado, and dressing, and serve immediately with freshly ground black pepper and extra dressing on the side.

Spinach And Orange Salad

  • 3/4 lb fresh spinach, torn into bite-size pieces
  • 3 medium oranges, peeled, sectioned, and seeded
  • 1 medium red onion, sliced and separated into rings
  • 1/4-1/3 cup french dressing (try one from this site)

Recipe

  • 1 wash spinach thoroughly and allow to dry (use a salad spinner, if you have one).
  • 2 combine spinach, orange sections, and sliced onion in a large salad bowl, tossing well.
  • 3 drizzle dressing over spinach mixture; toss gently.

Strawberry-rhubarb Fruit Leather

Total Time: 16 hrs 15 mins Preparation Time: 15 mins Cook Time: 16 hrs

Ingredients

  • Servings: 48
  • 3/4 cup orange juice
  • 3 cups rhubarb, chopped
  • 4 cups strawberries, chopped
  • 1 cup honey
  • 1/8 teaspoon red food coloring (optional)

Recipe

  • 1 line 3 half-sheet pans (11.5" x 16.5", with sides), with freezer paper, shiny-side up. spray the freezer paper with vegetable oil spray (pam).
  • 2 clean and hull the strawberries and wash rhubarb.
  • 3 chop rhubarb and place in a 3 or 4 quart sauce pan.
  • 4 add orange juice and cook over medium-low heat, stirring occasionally, until rhubarb is soft.
  • 5 add the chopped berries and cook for another 3 or 4 minutes.
  • 6 remove from heat and stir in the honey and coloring, if using.
  • 7 cool slightly, then puree using a stick blender (or carefully in batches in a blender or processor), until very smooth.
  • 8 evenly spread about 2 and 1/2 cups of the puree on each prepared pan.
  • 9 shake the pan back and forth gently to make an even thickness from edge to edge; and off-set spatula can also be helpful here.
  • 10 make sure the layer of puree is as even as possible so it will dry evenly.
  • 11 place pans in 150º f oven (i have a commercial oven that will take all three pans at once, but one or two pans can be dried at a time while the third pan waits - you might want to cover it with plastic wrap and chill it).
  • 12 close the oven door, but keep it slightly ajar by placing a folded kitchen towel in the door.
  • 13 let the leather dry for 10 to 12 hours (overnight is ideal), until it is dry but still pliable.
  • 14 pans may need to be shifted in the oven occasionally to dry evenly.
  • 15 when the leather is no longer sticky, remove from the oven, peel it off the paper in one large sheet, and turn it over, right back onto the freezer paper it came off of.
  • 16 turn off the oven and return the "flipped" leather to the oven, with door ajar, for another 1 or 2 hours to complete the drying.
  • 17 peel the leather off the paper and place on a large cooling rack and let air dry for 2 to 4 hours.
  • 18 your kitchen's humidity will really determine the drying times.
  • 19 lightly dust with cornstarch, if desired, to reduce any remaining stickiness.
  • 20 cut into serving-sized squares and roll up in plastic.
  • 21 you can also roll the whole sheet of leather into one large piece of plastic wrap and store it that way; cut it or "rip" it when ready to eat.
  • 22 store in a cool dry place, or in the fridge or freezer.

Nasu Dengaku (broiled Japanese Eggplants With Miso)

Ingredients

  • 4 tablespoons sake or 4 tablespoons wine
  • 2 tablespoons sugar
  • 3 tablespoons miso (red or )
  • 4 japanese eggplants, trimmed and cut lengthwise
  • 1/2 tablespoon sesame oil
  • sesame seeds
  • 2 green onions, sliced thin

Recipe

  • 1 mix sake or wine with sugar and boil for a few minutes.
  • 2 add miso to wine and cook just until miso is mixed in.
  • 3 lightly brush or rub cut side of eggplants with sesame oil.
  • 4 place eggplants cut side down under a broiler on high for 3 minutes.
  • 5 turn eggplant over and broil another 3 minutes.
  • 6 spread sesame mixture thinly over cut side of eggplant and return to broiler for about 1 minute.
  • 7 remove from oven and sprinkle eggplants with sesame seeds and green onion.
  • 8 *note if you have extra miso mixture it's great to add to a stirfry.

Groovy Smoothies 2007

  • 1 small ripe banana
  • 1/2 cup frozen whole unsweetened strawberries
  • 1/2 cup vanilla yogurt
  • 1/2 cup whole milk

Recipe

  • 1 remove the peel from banana and using a table knife cut the banana into chunks.
  • 2 put the fruit, yogurt, and milk into a blender.
  • 3 cover the top with the lid and blend on high speed until nice and smooth.
  • 4 turn off blender and pour into a glass.
  • 5 use the scraper to get all of the drink out of the blender.
  • 6 this makes one serving, you can double the recipe for two kids.

Strawnanna Smoothie

Strawberry-rhubarb Freezer Jam

Ingredients

  • 1 cup fresh strawberries
  • 1 cup rhubarb
  • 4 cups sugar, measured into separate bowl
  • 3/4 cup water
  • 1 (1 3/4 ounce) box fruit pectin

Recipe

  • 1 rinse clean plastic containers and lids with boiling water. dry thoroughly.
  • 2 stem and crush strawberries thoroughly, one layer at a time. measure exactly 1 cup strawberries into large bowl. cut rhubarb into 2-inch pieces. finely chop or grind fruit. measure exactly 1 cup rhubarb. add to strawberries; mix well. stir in sugar. let stand 10 min., stirring occasionally.
  • 3 mix water and pectin in small saucepan. bring to boil on high heat, stirring constantly. boil and stir 1 minute add to fruit mixture; stir 3 minute or until sugar is dissolved and no longer grainy. (a few sugar crystals may remain.).
  • 4 fill all containers immediately to within 1/2 inch of tops. wipe off top edges of containers; immediately cover with lids. let stand at room temperature 24 hours. jam is now ready to use. store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. thaw in refrigerator before using.

Sweating Onions

Recipe

  • 1 heat pan over low heat add oil to heat.
  • 2 add onions and cover to keep onions moist.
  • 3 remove cover and stir occasionally.
  • 4 do not allow onions to brown.
  • 5 cook until the onions are translucent and soft but have not started to brown about 5 minutes.
  • 6 season with salt pepper and herbs if you desire and proceed with the recipe that calls for sweating onions.

Strawberry-rhubarb Sorbet

Ingredients

  • 12 ounces rhubarb
  • 2/3 cup water
  • 3/4 cup sugar
  • 10 ounces fresh strawberries, rinsed and hulled
  • 1/2 teaspoon fresh lemon juice

Recipe

  • 1 wash rhubarb stalks and trim the stem and leaf ends; cut rhubarb into ½ -inch pieces.
  • 2 put rhubarb, water, and sugar in a saucepan; bring to a boil.
  • 3 decrease heat, cover, and simmer for 5 minutes, or until the rhubarb is tender and cooked through.
  • 4 remove from heat and let cool to room temperature.
  • 5 slice the strawberries and puree them with the cooked rhubarb mixture and the lemon juice in a blender or food processor until smooth.
  • 6 chill the mixture thoroughly, then freeze it in your ice cream maker according to manufacturerĆ¢€™s directions.

Recipe

  • 1 dissolve sugar in water.

  • 1 in a blender or using a submersion blender, combine fruit and honey or sugar (as called for, to taste) and milk; purée until smooth. add yogurt and pulse just until combined. pour into ice-pop moulds and insert sticks, or pour into 3 oz. paper cups. if using paper cups, freeze until partially firm then insert sticks, straws, or plastic spoons. freeze until solid, for 2-4 hours, or up to 2 weeks.
  • 2 cooking tip: if using paper cups, once the smoothies are frozen solid, transfer to an airtight container to make sure they don't get freezer burn.

Slow-simmered Kidney Beans

  • 1/2 lb fully cooked polish sausage or 1/2 lb kielbasa, chopped
  • 4 (16 ounce) cans kidney beans, rinsed and drained

  • 2 medium sweet red peppers, chopped
  • 1 large onion, chopped
  • 1 cup ketchup
  • 1/2 cup brown sugar, packed
  • 1/4 cup honey

Recipe

  • 1 in a skillet, cook bacon until crisp. remove with a slotted spoon to paper towels.
  • 2 add sausage to drippings; cook and stir for 5 minutes. drain and set aside.
  • 3 in an ungreased 5 quart slow cooker, combine the beans, tomatoes, red peppers, onion, ketchup, brown sugar, honey, molasses, worcestershire sauce, salt and mustard. stir in the bacon and sausage.
  • 4 cover and cook on low for 4-6 hours.
  • 5 stir in apples.
  • 6 cover and cook 2 hours longer or until bubbly.
  • 7 cook's notes: i have never used the apples and never will. also in a pinch you can cook the onions and bell peppers in the bacon drippings, after the sausage, until translucent then add to the crockpot. this will cut down on cook time.

Sweet And Salty Lemonade

  • 1 lime, cut in half
  • 2 cups water
  • 1/2-1 tablespoon sugar
  • 1/2-1 teaspoon salt

  • 1 squeeze the juice of the lime into a tall glass.

Spanish Hot Chocolate

  • 1 blend the sugar and cocoa together. in a medium sized saucepan, dissolve the cornstarch in the water. add the cocoa and sugar and stir until a smooth paste is made.
  • 2 over medium heat, add the milk a little at a time while whisking.
  • 3 simmer the chocolate for 10 minutes, stirring frequently. serve hot.

Recipe

  • 1 place the 5 cups of sugar in an airtight container.
  • 2 layer lavender flowers and some lavender stems (washed and dried!) with the sugar.

  • 4 remove the stems; you may leave the flowers in the sugar if you'd like.

Strawmellows

Ingredients

  • 12 large strawberries
  • 24 mini marshmallows

Recipe

  • 1 wash the strawberries.
  • 2 with a knife cut a hole in the strawberry around the stalk so the stalk comes out and there is a hollow in the middle.
  • 3 stuff 2 marshmallows into each strawberry.
  • 4 push a skewer through the strawberries so the marshmallow is held in place.
  • 5 hold over the barbecue for 1-2 minutes per side or until the marshmallow starts to melt.
  • 6 take off the barbecue and eat it how you like.

Tasty Greek Salad

Ingredients

  • 3/4 large english cucumber, cubed
  • 3 large tomatoes, cubed
  • 1/2 red onion, sliced
  • 1 cup black olives
  • 1/2 cup feta cheese, cubed
  • 1 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 head romaine lettuce, rinsed, dried and chopped

Recipe

  • 1 mix all the ingredients together in a large salad bowl, and let sit about one to two hours. serve at room temperature.

Spanish Dinner Salad (ensalata De Marina)

Ingredients

  • Servings: 4
  • 1 (8 ounce) bag romaine lettuce, pre-washed
  • 1 (6 ounce) can tuna in olive oil
  • 2 roma tomatoes
  • 1/2 onion, sliced
  • 1/2 avocado, in bite-sized pieces (optional)
  • sea salt, finely ground
  • balsamic vinegar
  • extra virgin olive oil

Recipe

  • 1 in a large salad bowl, cut up the tomatoes and add the sliced onions.
  • 2 add bag of romaine lettuce.
  • 3 add avocado and the entire can of tuna, with the olive oil. if i only have tuna with regular vegetable oil, i usually drain out as much of the oil as i can before adding the tuna.
  • 4 sprinkle a couple pinches of sea salt over the salad.
  • 5 douse with balsamic vinegar and olive oil. i have never measured the amount, so whatever suits your tastes. i usually use more vinegar than oil since the tuna has olive oil.
  • 6 toss well and serve.

Spanish Green Salad With Roasted Red Peppers And Preserved Lemon

Ingredients

  • Servings: 6
  • 1 head romaine lettuce
  • 1/2 cup black olives
  • 2 red peppers
  • 2 garlic cloves
  • 1 fennel bulb
  • 2 lemons
  • 1 carrot
  • 4 roma tomatoes
  • olive oil
  • salt and pepper

Recipe

  • 1 cut up the red peppers into quarters, drizzle with some olive oil, and place under broiler to roast. once the skins are somewhat blackened, remove from heat and cover so that the skins can come loose.
  • 2 slice the garlic cloves (preferably large russian red - use more cloves if they are small) and saute them in 2 t of olive oil. pour the oil and the browned sliced garlic into a container and set aside.
  • 3 thinly slice the fennel bulb. saute it briefly in the saucepan you made the garlic inches.
  • 4 the lemons are for making quick preserved lemons. juice one lemon and put it in a saucepan with a t of salt and 1/2 t of sugar. take the second lemon and slice it very thinly and put it in the lemon juice mixture in the saucepan. bring to a boil, then reduce heat and let simmer, covered, for 10 minutes.
  • 5 clean and roughly chop the head of romaine and place it in a large salad bowl with room for tossing. grate the carrot and add it to the bowl. chop the roma tomatoes into large pieces and add to the bowl as well. add the sauted fennel.
  • 6 peel the roasted peppers, cut them into strips and add them to the salad bowl.
  • 7 combine the preserved lemon slices with the olive oil and garlic chips. add a t or two of the lemon liquid and more olive oil, mix it a bit and let the garlic and lemon flavours mix.
  • 8 pour over the salad, add the olives, and toss thoroughly so the oil and lemon coats everything. add fresh ground pepper and salt to taste, adding more olive oil and reserved lemon liquid as needed.
  • 9 let the salad sit in the fridge for at least an hour so the flavours can combine, then serve.

Strawberry-rhubarb Jam

Ingredients

  • 5 cups rhubarb, cut up
  • 3 cups sugar
  • 3 cups strawberries, sliced
  • 1 (6 ounce) package wild strawberry gelatin

Recipe

  • 1 put rhubarb and sugar in a container in the fridge overnight.
  • 2 the next day add strawberries to rhubarb and sugar; bring to a boil for 1 minute.
  • 3 remove from heat and immediately add jello gelatin.
  • 4 do not cook! just stir, put into jars and freeze.
  • 5 you can omit the strawberries.

Frozen Rhubarb Yogurt

Ingredients

  • Servings: 4
  • 2 cups stewed rhubarb
  • 1/2 cup plain low-fat yogurt
  • 3 tablespoons granulated sugar
  • 2 tablespoons orange juice

Recipe

  • 1 in food processor, puree rhubarb until smooth.
  • 2 blend in yogurt, sugar and juice.
  • 3 freeze in ice cream maker according to instructions.
  • 4 or cover and freeze in a shallow metal pan 3 to 4 hours or until almost firm.

  • 1/2 cup water
  • 1/2 cup corn syrup
  • 1 teaspoon flavor extract (banana, orange, strawberry, etc)
  • food coloring (any color u want ur lolli's to be)
  • li hing mui seeds (you can substitute this with any candy choice. skittles, gum, gummy bears, etc)
  • candy molds (molds that can handle or that is made for hot temp.candy)
  • lollipop sticks (you can find these in walmart and craft stores in the craft area)

Recipe

  • 1 *prep candy molds with pam or any non-stick spray.
  • 2 -in a quart size pot, cook and stir your sugar, water, and corn syrup on medium heat.
  • 3 -stir til sugar dissolves.
  • 4 -put your candy thermometer in and cook until it reads 300 degrees.
  • 5 -remove from burner.
  • 6 -quickly add your flavor and food coloring(according to your color prefference).
  • 7 -pour candy into molds.
  • 8 -add in ur sticks and li hing mui seed/powder(or candy) into your candy mold.
