Tofu Scramble

Ingredients
- 2 -3 tablespoons extra virgin olive oil
- 1 garlic clove, minced
- 1/2 teaspoon ground ginger
- 1/2 teaspoon chili powder
- 1/2 green bell pepper, seeded and chopped
- 1 cup sliced mushrooms
- 4 tomatoes, chopped
- 1 lb firm tofu, drained well and cut into bite-size pieces
- tamari, to taste
- fresh ground pepper, to taste
- 4 corn tortillas, warmed
Recipe
- 1 heat the olive oil over medium heat in a large skillet and sauté the onion for 5 minutes, until softened.
- 2 add the garlic and spices, stir, and cook for 1 minute.
- 3 add the pepper and mushrooms, stir-frying until tender-crisp.
- 4 add the tomatoes and slices of tofu.
- 5 gently stir-fry for 3 to 4 minutes.
- 6 sprinkle with the tamari sauce and season with fresh pepper and chives.
- 7 serve on a warm plate with a warm tortilla.
