Tofu Scramble

Ingredients

  • 2 -3 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon chili powder
  • 1/2 green bell pepper, seeded and chopped
  • 1 cup sliced mushrooms
  • 4 tomatoes, chopped
  • 1 lb firm tofu, drained well and cut into bite-size pieces
  • tamari, to taste
  • fresh ground pepper, to taste
  • 4 corn tortillas, warmed

Recipe

  • 1 heat the olive oil over medium heat in a large skillet and sauté the onion for 5 minutes, until softened.
  • 2 add the garlic and spices, stir, and cook for 1 minute.
  • 3 add the pepper and mushrooms, stir-frying until tender-crisp.
  • 4 add the tomatoes and slices of tofu.
  • 5 gently stir-fry for 3 to 4 minutes.
  • 6 sprinkle with the tamari sauce and season with fresh pepper and chives.
  • 7 serve on a warm plate with a warm tortilla.
