Sweet Potato Burrito

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 medium sweet potato
  • 1 medium onion
  • 1 (12 ounce) can black beans (mine are seasoned with cumin and cilantro)
  • 1 (12 ounce) can whole kernel corn
  • 1 (10 ounce) can rotel tomatoes & chilies (or similar)
  • sugar
  • olive oil
  • tortilla

Recipe

  • 1 cut potato into cubes and cook to soften. i use a microwave.
  • 2 heat olive oil in a pan.
  • 3 dice onion and add to hot olive oil.
  • 4 cover onions liberally with sugar and stir mixture together.
  • 5 allow onions to cook until they start to blacken.
  • 6 mix beans, corn and rotel in a bowl/piece of tupperware/whatever.
  • 7 add the sweet potato and onion to the mixture.
  • 8 mix together.
  • 9 put in tortilla.
  • 10 eat.
  • 11 also: if you're feeling devilish, you can fry the burrtio in the remaining olive oil. mmmm.
