red and sweet potato salad

Ingredients

  • Servings: 12
  • 6 red potatoes, diced
  • 3 large sweet potatoes, diced
  • 3/4 cup mayonnaise
  • 1/2 red onion, diced
  • 1 tablespoon prepared horseradish
  • 1 tablespoon spicy brown mustard
  • 1 tablespoon roasted garlic-flavored olive oil
  • 1/4 pound crumbled cooked bacon
  • 1 pinch garlic powder
  • 1 pinch sea salt
  • 1 pinch ground white pepper
  • 1 pinch paprika

    Preparation Time: 10 mins Cook Time: 15 mins Ready Time: 55 mins

  • place red potatoes and sweet potatoes into a large pot and cover with salted water; bring to a boil. reduce heat to medium-low and simmer until tender, 15 to 20 minutes; drain.
  • transfer potato mixture to a large bowl and refrigerate until cooled, about 30 minutes.
  • mix mayonnaise, red onion, horseradish, mustard, olive oil, bacon, garlic powder, sea salt, and white pepper, respectively, into potato mixture; garnish with paprika.
