Port Roasted Tomatoes

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 6 roma tomatoes (italian)
  • 200 ml port wine
  • 4 tablespoons brown sugar

Recipe

  • 1 heat your oven to 150c.
  • 2 cut the tomatoes in half lengthways, place them in a baking dish, cut side up.
  • 3 pour the port over the tomatoes, sprinkle 1 teaspoon brown sugar over each half, then bake until tomatoes are caramelized and port is syrupy-about 1 hour.
