T's Roasted Garlic Spread

Ingredients

  • 3 heads garlic, roasted
  • 1 whole onion, caramelized
  • 1 (32 ounce) container low-fat plain yogurt, drained
  • 1 pinch salt and pepper, to taste

Recipe

  • 1 take container of yogurt and place in a cheese cloth lined strainer, set strainer in a bowl to catch the liquid and let sit in the refrigerator until most of the liquid is drained from it (ready in a couple hours) when completely drained the yogurt will have the consistency of cream cheese.
  • 2 place roasted garlic and caramelized onions in food processor and process until it turns into a paste, add all but 1/2 cup of the yogurt cream cheese, process for a few seconds and add salt and pepper to taste. can be spread on bagel or pretzel chips or used as a dip for veggies.
