Trader Joe's Baby Zucchini And Squash With Fresh Mint

Ingredients
- Servings: 6
- 16 ounces baby squash, cut in half (those small round, fluted-edge squash-both yellow and green)
- 2 tablespoons olive oil
- 1 large garlic clove, finely minced
- 1 cup grape tomatoes or 1 cup cherry tomatoes
- 2 tablespoons fresh mint, cut into thin strips (not dried mint!)
- kosher salt, to taste
- cracked black pepper, to taste
Recipe
- 1 note: i used an ovenproof grill pan to prepare this side dish.
- 2 place the baby squash in the grill pan.
- 3 add all the ingredients except for the fresh mint. toss gently to coat the vegetables with the olive oil.
- 4 roast at 425 degrees for 15 minutes. stir the vegetables at the halfway mark.
- 5 remove from oven and garnish with the fresh mint.
- 6 serve hot.
- 7 servings are estimated.
