Knox Dainties

Ingredients

  • Servings: 60
  • 12 1/2 teaspoons knox unflavored gelatin (5 envelopes)
  • 2 cups cold water
  • 4 cups sugar
  • 1/4 teaspoon salt (optional)
  • 4 teaspoons orange extract or 4 teaspoons lemon extract or 4 teaspoons other extract
  • food coloring (optional)
  • powdered sugar

Recipe

  • 1 sprinkle gelatine over cold water in 4-quart saucepan; let stand 1 minute.
  • 2 cook on low heat 5 minutes or until gelatine is completely dissolved, stirring frequently.
  • 3 add sugar and salt; stir.
  • 4 increase heat to medium-high. bring just to boil. cook until gelatine is dissolved, stirring occasionally.
  • 5 reduce heat to low; simmer, without stirring, 15 minutes.
  • 6 stir in extract and food coloring.
  • 7 pour into 8-inch square pan.
  • 8 refrigerate 3 hours or until set.
  • 9 dust cutting board heavily with powdered sugar. with tip of wet sharp knife, loosen gelatine from sides of pan.
  • 10 briefly dip bottom of pan in hot water; unmold gelatine onto cutting board.
  • 11 dust top of gelatine with powdered sugar; cut into 1-inch squares.
  • 12 roll squares in additional powdered sugar. store in tightly covered container in refrigerator.
