Simple Black-eyed Pea Salad

Ingredients

  • Servings: 4
  • 2 (15 ounce) cans black-eyed peas, drained and rinsed
  • 1 small red onion, diced
  • 2 jalapeno peppers, seeded and chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar, or to taste
  • salt and ground black pepper to taste

  • mix black-eyed peas, red onion, jalapeno peppers, olive oil, and red wine vinegar together in a bowl; season with salt and pepper.
