Raspberry-champagne Granita

Total Time: 8 hrs 5 mins Preparation Time: 8 hrs Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 2 cups fresh raspberries
  • 2 tablespoons fresh lime juice
  • 1 1/2 cups water
  • 1 tablespoon sugar
  • 3/4 cup champagne

Recipe

  • 1 place the raspberries and lime juice in a blender; process until smooth.
  • 2 combine water, sugar and champagne in a medium saucepan, bring to a boil.
  • 3 reduce heat; simmer 1 minute or until sugar melts.
  • 4 remove from heat, stir in raspberry puree.
  • 5 pour the mixture into a large, shallow baking dish.
  • 6 cover and freeze 8 hours.
  • 7 remove dish from freezer and let stand for 5 minutes.
  • 8 scrape entire mixture with a fork until fluffy.
