The Easiest Fruitcake Ever!

Ingredients
- Servings: 40
- 1 kg mixed dried fruit
- 2 cups brewed black coffee, cooled (i use decaff!)
- 2 cups self-raising flour
Recipe
- 1 add coffee to fruit and soak overnight.
- 2 next day preheat oven to 160 deg celsius. lightly grease and line a 21cmx21cm cake tin with baking paper.
- 3 add the flour to the soaked fruit and stir until thoroughly combined.
- 4 bake for approximately 2 hours, or until an inserted skewer comes out clean. (if any exposed fruit on top is browning too quickly, cover cake with loose layer of aluminium foil.).
- 5 remove from oven and allow to cool.
