Sauteed Cherry Tomatoes With Mediterranean Herbs

Total Time: 8 mins Preparation Time: 5 mins Cook Time: 3 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons extra virgin olive oil
  • 2 (4 cup) pints cherry tomatoes, stemmed if necessary
  • 3 tablespoons finely chopped fresh basil
  • salt, preferably the course variety,and freshly ground black pepper to taste

Recipe

  • 1 in a large nonstick skillet, heat the oil over medium-high heat.
  • 2 add the tomatoes and cook, tossing and stirring often, until the skins begin to split, about 3 minutes.
  • 3 do not over cook.
  • 4 remove from the heat and toss with the herbs; season with salt and pepper.
