Ingredients

- 1 1/2 tablespoons extra virgin olive oil
- 2 (4 cup) pints cherry tomatoes, stemmed if necessary
- 3 tablespoons finely chopped fresh basil
- salt, preferably the course variety,and freshly ground black pepper to taste
Recipe
- 1 in a large nonstick skillet, heat the oil over medium-high heat.
- 2 add the tomatoes and cook, tossing and stirring often, until the skins begin to split, about 3 minutes.
- 3 do not over cook.
- 4 remove from the heat and toss with the herbs; season with salt and pepper.
- 5 serve immediately.
