Ingredients

- 4 cups all-purpose flour
- 2 teaspoons salt
- 1 teaspoon baking soda
- 1 cup packed brown sugar
- 1 1/2 cups butter
- 2 eggs
- 1/2 cup molasses
- 2 cups rolled oats
- 1 cup dates, pitted and chopped
- 1/2 cup white sugar
- 1/4 cup water
- 1/2 cup chopped walnuts
Recipe
- blend flour, salt, and baking soda. add brown sugar, margarine, eggs and molasses. stir until smooth. blend in oats.
- roll dough out on floured board, about 1/8 inch thick. cut with 2 1/2 inch round cutter. place half of the rounds on an ungreased cookie sheet.
- to make filling: stir until boiling: 1 cup cut-up pitted dates, 1/2 cup sugar, and 1/4 cup water. mixture will be thick. stir in 1/2 cup chopped nuts. cool before using.
- spread 1 teaspoon filling on center of each cookie. cut a cross in the middle of the remaining rounds. place over filling-topped rounds. press down on the edges to seal. bake 12-15 minutes at 350 degrees f (175 degrees c).
